He is known as the "father of canning." A confectioner and chef in Paris before 1800. He invented a method for food preservation in sealed airtight containers. In 1810, he responded to an offered prize of 12,000 francs for a new method to preserve food. In 1810 he published L'Art de conserver les substances animales et végétales (The Art of Preserving Meats and Vegetables).
It was years before Louis Pasteur proved that it was the heating the sealed containers that actually preserved the food by killing the bacteria.
